Recipes for a Cold Pasta Salad?

Looking for something light, no mayo involved ...with a Greek/Italian/ Mediterranean vibe.

Was wondering if anyone had a tried and true recipe before i just start making up stuff on the fly ...

Grilled shrimp
Cherry Tomatoes
Dressing made with oregano, lemon juice, olive oil, salt pepper
Parsley

Can omit shrimp and replace with other protein or leave out entirely. Can add feta, hot peppers, cucumber, more oregano, thyme, etc...

Rotini pasta, boiled shrimp, black olives, grated cheese, Italian dressing. Lots of Tony's (pretend Tony is Italian).

Oh. You said tried and true. My tried and true is similar to the above, but also includes a bunch of things that wouldn't be Greek/Italian/Mediterranean.

Wife makes this. Use dill instead of oregano, add feta and cucumbers. Think it's an Ina Garten recipe.

I typically hate pasta salads, but really like this one.

I have a muffalatta pasta recipe in the TD cookbook on page 93 of the Word document.

It makes for a good dish to take to the beach and keep in the fridge. Anyone can dish up some lunch quickly.

My wife makes the Lipton Suddenly Pasta a couple times a month. It's a good base and they have the flavors you looking for.

Quick easy recipe is pasta/veggies (cukes maters carrots bell peppers etc) with Italian dressing and parmesan cheese

Pasta, olive salad, good cheese. Add a few cut up onions, red bell peppers etc...

Obviously someone who likes pasta salads a lot more than I do.

a-hole seems a bit strong to describe someone who simply has a propensity to purchase random oddly tailored cookbooks, though.

I've been trying to figure out how this makes a person an a-hole since I first saw your post earlier.

What's wrong with someone buying a cookbook dedicated to salads? What about one dedicated to side dishes or spinach or soups? I have several soup cookbooks. Am I an a-hole?

As much as I make that kind of stuff for potlucks, work, and etc I definitely would. Especially in the summer when it's too damn hot. I can always use ideas when cooking.

So I'm not a big fan of pasta salads.....I look at the pasta past as empt-calories filler. Okay if you have to feed 500 ppl for $3/head, but if you're not pinching pennies, skip the pasta and add an ingredient with flavor and color instead. Diced cucumber, thinly sliced zucchini, roasted yellow peppers, lightly steamed sugar snap peas....

Cold mushy pasta sux.

I usually boil rotini, mix in olives and sliced cherry tomatoes and vinaigrette dressing. Easy, fast and good.
