Quinoa recipes

I just learned that it is high in protein and a great alternative to meat, which I'm trying to eat less of. I had it for the first time last night when the wife put it in a stew with tomatoes and butternut squash.

Anyone have any other recipes for a 'meatless Monday' featuring this stuff?

I do a caprese one with tomatoes, fresh basil and buffalo moz.

I also do a mexican one with black beans, corn, Rotel, cumin and cilantro.

I always cook it with chicken or veggie stock instead of plain water.

I make quinoa and black beans using this as a guideline. Even my kids eat it this way.

I make a bortobello/shitake quinoalaya. Make it just like jambalaya but substitute mushrooms for meat and quinoa for rice. Also, it gets a bit more flavor if you use veggie stock instead of water.
