What is your preference? I just tried a newer place's Quesadillas. I usually get their tacos, but the Chicken Quesadilla sounded good. I get it back to my desk and open the box, and it is literally swimming in sauce. And not just a little cheesy sauce melted/poured over the top, but this reddish broth/cheese mixture, and it has ran over into the rice. It was good, but it got me to thinking that I like them better when sliced into quarters where you can pick them up and eat them with your hands.

Seems like places do this with Burritos as well. I've been to a few places where it has the sauce all over it, and then there are places like Moe's that serve it dry and wrapped up.

No sauce on quesadilla. Sauce makes it a different dish entirely imo.

I can go either way on burritos. When I make them at home I always make a new mexico red or green sauce.

I don't know how serious the rules are for mexican food. Especially Tex-Mex where freedom should reign!!!

I like a good sauce but that sounds like a big mess.

Quesadillas make me think finger food like a sandwich.

That was my point. Most of the places I go for Mexican, or Tex-Mex, the Quesadillas are more of an appetizer item where anyone can grab a triangle and top it or dip it. It was just odd to me to see it bathing in sauce. The sauce was really good, and I stirred some into the rice and beans as well. But I wanted to pick it up and eat the quesadilla, not have to use a fork and knife.

Can't say I've ever had a quesadilla with a sauce on it. I do spread a little sour cream/salsa/guac on top (depending which I'm in the mood for) and like to dip in queso cup. But I spread it lightly like a pizza sauce or something. Still can be held and eaten.

ETA: I love burritos with sauce on them like some restaurants do.

It sounds like they covered it in queso cheese dip.
