Actually I've been noticing a lot of stores marketing "prime" beef lately
Leaving out the USDA part

The new HEB is freaking legit. They were handing out roasted prime rib samples the last time I went in.

Bought 3 steaks and tuna yesterday. Some of the steaks looked poorly butchers, with lots of fibrous fatty tissue in the center of the cut. Never seen that with a strip. Found 3 good ones. I'd say they were lower end of prime/upper end of choice. Made carpaccio which was delicious and cooked a bit but had to trim a good bit of fat.

Got a couple tuna steaks and made sashimi. Tuna was delicous. Steal at 7.99

Sometimes HEB will have prime strips on sale for $7.99 to $8.99 per lb. I'll stock up and vacuum seal / freeze a bunch when they do. A buddy asked the butcher when they decide to have a sale like that -- says corporate office calls and it's game on. Wish I could figure out when they do it, but they generally have good looking choice meat too.

This was a haul in January -- $8.97/lb:

Is $12.99/lb at fresh market. This is not a whole roast, but individual cuts.

Costco ran a deal like that around Christmas. Ended up around $6 lb.

I just cooked a couple of the strips from Fresh Mkt.

Thought they were excellent and plan on going back tomorrow and getting more.

Yeah, that was for the whole roast though. I bought one and it was a fantastic deal.
