For the first time I bit the bullet and bought some $20 a pound prime ribeyes and cooked them today over lump charcoal.

It was a very nice treat.

Perfect steaks.

Let me put it this way--my favorite steak house is Vic and Anthony's and they serve prime steaks. Mine were just as good. Salt and pepper is all I use.

Now if I could master those wonderful sides they serve!!

(Does anyone know exactly how to do the mushrooms they have? a waiter told me they put them in the oven for hours and then reconstitute them with chicken broth and seasoning. I can't get close on my own.)
