My eggs never turn green, but you're boiling in salted water - hence changing the boiling temperature. With salted water they can over cook faster leading to rubbery whites and green rings around yolk.

On another topic you mentioned, we eat light Hellmans mayo at our house because we like light Hellmans mayo. Add bacon, onion, celery, and parsley to the potato salad. You can't stop eating it.

That is more the German style, I think, although they use oil instead of mayo. I am a mayo guy, myself - yes, Blue Plate.

My temporary cornbread insanity is over. Don't have the fixings to make more and won't be purchasing any flour or corn meal in foreseeable future.

We like different kinds of potato salad. Lately we've been using Dijon Mustard.
