Definitely check out the gorge. Plenty of hiking and awesome views. Can recommend a couple if you want. The coast isn't far away. Cannon beach is nice and isn't as busy as other towns.
Lots of wineries nearby, just google them. I honestly am not into that.

When I was there I stumbled into to Tug Boat brewing at 711 SW Ankeny St. Very hole in the wall esque making tiny batches of beer. It was all open fermentation, real ale. If you are in the area I would stop on in. It is right next to Bailey's Taproom which in my opinion is a must stop.

I went on one of these with my girlfriend last September. It was one of the best things we did the whole trip in Oregon. It was mostly older couples in their 50s but you have to pretty cool to go on a brewery tour. The girl who runs Brewvana is good friends with the breweries she takes tours to. The brewmaster of Hopworks gave us a flat to drink after we went there for free.
All of the others mentioned are great.

It looks like it would be pretty cool. The Japanese Tea Garden in SF is a 20 minute walk from my house so it would be cool to see another one.

I have internet access very temporarily.
Don't forget about McMenamins. They have a ton of brewpubs in Portland. They have some of the most forgettable and some of the most memorable. The Kennedy School and Imbrie Hall are really cool. The beer is pretty good and the atmosphere is fantastic - they restore old buildings and keep a lot of the original charm.
McMenamins has a lot of brewpubs that are so-so, as well. I wouldn't bother with any of the ones that are located in strip malls.
I concur with the Cannon Beach recommendation. Seaside is going to be crazy crowded with families with kids who want video arcade and pulled taffy. Cannon beach is more laid back for adults - nice restaurants, scenic views, etc.

If he goes to Cannon Beach he might as well go to Astoria, it is a cool town and the Coast Guard museum, which also has a history of tatooing in it, is interesting. Good history on how dangerous the area where the Columbia meets the Pacific.
Dundee, which is roughly 40 minutes south of Portland has some good wineries. The deck at Torii Mor is very nice and Lange and Sokol Blosser have some very good wines.
Full Sail at the Gorge has good views, beer was kinda average IMO. If you like coffee Stumptown has some great coffee, the cold brewed is excellent, it is right down from Voodoo Donuts.
I am going to Portland with a friend who is an UT alum and going to Autzen for the game 9/14, will not be pretty. If I didn't enjoy visiting OR I would have said thx, but no thx. Going to summit Mount St Helens on 9/12, hopefully I don't have to carry his arse up to the top.
