Pork Rillettes---need some help

I have eaten rillettes both at Couchon and R'Evolution. I love it and want to make some.
All the pictures of the recipes I see online show the end product still sort of stringy. How do these restaurants get the end product so smooth?
Any hints or recipes?

Food processor. That's how I do my rabbit rillettes

Do you do that after it cooks a while or in the beginning? I am thinking of starting with a smoked butt to give them some smoke flavor.
