I think Motorboat found out that the only time you have to take oil off the top of gumbo that doesn't come from the meats is when your roux breaks. Kudos to him for admitting he was wrong.

Don't think this one is going to change. I've always been that way. I more enjoy challenging myself rather than measuring my skills or mental acumen against another person. Kind of like the internal struggle during a round of golf vs. a head-to-head game of tennis.
