Mustard + seasoned corn meal/corn flour. Mix two seaoning pouches like Louisiana & Tonys or Oak Grove & Tonys

I've never tried it with hotsauce and now ill never fry without it. Everyone agreed.

Whole scored catfish is is so much better. I love grabbing the tail and dragging a fork down the body to remove the meat, plus it tastes better.

Louisiana hot sauce. I can't believe I have lived my entire life here and never fried catfish with hotsauce. It 100% changes the flavor...in a good way.... takes it to a whole new level. Still tastes like catfish though. Amazing :-)

No one touched the buttermilk ones after they tasted the hotsauce/mustard mix.

To the OP...How did you clean up the spilled oil on the concrete? I am having such a hard time getting this out of the concrete at my house...

I've been saying this on here for a while....
Marinate dried filets on baking pan of hot sauce for 10-15 minutes
Make mixture of cornmeal garlic salt and pepper (season to taste)
Coat filets in meal mixture shaking off excess
Have oil heated to 350
put filets in and cook till floating do not overload the pot
If you think catfish is good like this try white perch
The hot sauce takes out the fishy taste and adds a good flavor

I use mustard/hot sauce combo. I mix a blue and a yellow pack of LA Fish Fry and fry at 370.
