Pickle Brined Chicken
Posted by Powerman on 6/23/16 at 1:48 pm10
So I decided to make this recipe I saw from Matty Matheson
Brine whole cut up chickens in pickle juice for 24 hours
4 hours in buttermilk
Dredge in well seasoned flour (his spice blend included a few things I didn't have on hand but I managed with what I had)
Came out really moist. Some of the best fried chicken I've ever had. Did it with some homemade belgian waffles and made a spicy syrup for the chicken.
I have pics but I'm too busy to post them at the moment. Will update when I get home.

Isn't that essentially what Chick Fil A does? Have always heard it is brined in pickle juice and then fried in a coating that resembles pancake batter.

I'm not sure. Apparently it's not that uncommon. I really enjoyed it.

"Our chicken is not marinated in pickle juice. Our Chargrilled Chicken and Chick-fil-A Chick-n-Strips were marinated in pickle juice a few years ago, however they are now marinated in the plant in a mixture of spices. There is some pickle flavor added to our Chick-n-Strips marinade recipe which gives that distinct pickle taste."
This makes a near flawless recreation of the chickfila sandwich

My first job was at Chik-Fil-A.
No pickle juice was involved in any of the recipes. There was actually no seasoning or marinade on any meats other than he chargrilled chicken, but there wasn't any pickle juice in there.
The pickle flavor comes from the fact that the sandwiches are assembled immediately after cooking ... on a buttered bun and nothing but 2 slices of dill pickle. Then they're sealed in a foil bag right away, and placed in a heated drawer.
The sandwiches and the nuggets are the same recipe for the chicken ... the seasoning is 100% in the flour which comes pre-mixed directly from corporate. That's why the sandwiches taste like pickle and the nuggets don't ... the nuggets aren't sealed in a foil bag with two slices of pickle immediately after cooking.

you can't help but feel just a little more gay after stepping into a Chick-Fil-A.
I'm sure this tongue and cheek

I have cooked chicken that I have brined in pickle juice on the grill and it is very good.

I have watched so many of his videos. I think there is some merit there, even though he kinda annoys me. I would probably do some things different from him, but your product looks boss. Good job, dude.
ETA: his grilled cheese video cracks me up. Kids are the worst.
