Peeled shrimp question

Peeled some shrimp that I'm gonna fry later this morning. Do you put them in water or your egg wash when you put them back in the fridge? Or just put them in a bowl and refrigerate till ready to cook?

I saltwater coonass once told me to keep the head on until it's time to fry. pop heads and peel when you're ready to start frying. something about the fat in the head that keeps the flavor or some shite.

To answer your question, I put them in a plastic container, cover with ice, and pour water over the ice until the shrimp are submerged ... then put it in the fridge until you're going to fry them. When you're ready to fry them, just drain and proceed with your normal frying process.

I wouldn't put them in the egg/milk wash until you're actually battering them.

Never did this. But I do always run a knife down the back of the shrimp for deveining. Gives the shrimp a little more surface area for batter. I can't explain it, But it always seem like the batter stuck better to deviened shrimp.

I want to keep them as well chilled as possible before frying and it just seems wrong to have raw shrimp in ice without water? I don't have a scientific reason.

Well FWIW, I did put them in the egg wash for a few hours prior to frying and they were fine.
I've seen shrimp in restaurants as Darla described which is why I posed the question.

I agree that butterflying the shrimp prior to battering helps the batter stick. Nothing scientific, just an observation
