What I mean is they probably receive a fish delivery each day and say, "Wow, this ______ is fantastic, let's use it as a crudo, now what can we do with it." Rather than having say a set menu of 5 different types of crudos that are available each day.

I pretty sure that's exactly what they do. Wouldn't you prefer to have the best of the freshest stuff available as opposed to a set menu that might not be as fresh?

Yes. That is my point and hence why the crudo selections are probably limited. Their oysters are lights out. Really like those Apalachicola ones

Gotcha.
I hope Link doens't catch on to how much I like this place. He may start raising the prices. We had that whole meal I listed above, + 3 cocktails all for $100+ tip. That is insane, highest cost item was $14.

I haven't been yet and you people that have been multiple times are making me crazy. I have reservations for my bday later this month. My Dad his gonna flip when he sees the menu.

you people and your raw fish.
despite the fact that for me a raw bar is a waste of real estate, the place is fricking awesome. I'll probably go again for dinner next week. if I was in town this weekend I'd be going sooner. Link is killing it with this place.

I have no problem with that and is usually my drink of choice there too. During happy hour $5 High Life & Jameson > $6 Hopitoulas. I still prefer fresh raw fish. If I knew y'all were there I would have brought those beers to you.

Anyways, the posted menu looks right up my ally and it looks like they are procuring whatever is fresh and going with that. But, is their menu more like Coquette, where it's changing weekly, or is the online menu posted the staples and they have a "fresh" menu as well?

The menu shifts seasonally, or will, but the main menu stays pretty consistent. There is also a daily specials sheet with raw, cooked, oysters, whole fish, etc... of the day.

Nice. Sounds like you've been more than once.
Is it a sit/drink/keep trying small plates/oysters, or a normal App/Entree/check kind of place?
We have an 8 or 8:30 reservation, but curious as to whether it might be more appropriate to sit in bar area(do they have that?) if we might sit for an extended period and drink/small plate it for a while.

You can sit at either the oyster bar or the regular bar and order off menu or sit at a table and order.
Its really similar in coursing to Cochon. Lots of smaller items with a few larger plates.
I've been 5 times already, but its probably because its close to office and makes a nice, light lunch. Granted I've gotten to know Ryan over the last few years so my viewpoint may be biased in full disclosure.

His raw tuna dishes are really excellent. Last time it had melon and mint. I like the fried oysters with a spicy slaw. I havent seen apalachicolas last two times, but they have had blue points for 1.40 a pop. The shrimp with chili garlic sauce, ground shrimp with noodles, crawfish gratin are pretty excellent. Smoked mussels.
