I know you had a beta version cooking for the gumbo calculator, you ever make any headway with that?

I'm no expert on gumbo, but I have been taking some notes on all the different discussions on here. For example, until recently, I never knew there was such a thing as "Chauvin Gumbo".

Is it similar to Natchitoches style red beans? Love me some sloppy red beans...

Gotcha, I was looking at it from a pot size/servings perspective, but I can see the pit falls.

I would be happy to help on this project. First, we would just have to agree on a type of gumbo. C&S would be easiest. Next decision would be about Okra. Once we make those 2 decisions, we can go forward.

What if you had different tabs for different "thickeners?" ... roux, okra, file ... or in the case of a Chauvin style gumbo, or a Gumbo Z'herbes, none? ...
would it be possible to have it set up that it could adjust to more than one thickener? Such as okra & file ... roux and okra ... roux and file ... there are only so many combination of thickeners or lack thereof ..
Roux
Okra
File
No Thickener
Roux & Okra
Roux & File
Okra & File
Roux, Okra, & File
Once you have your stock-thickener ratio set, could you then just run with the seasonong and ingredient variables, and the subsequent yield/pot size/serving results?

Now my brain is running ... it's like a damn LSAT logic problem ...
The Gumbo calculator would have to be ingredient/ratio based ... entirely too many variables when you start considering cooking techniques .... (like the thread about how to cook your chicken).
The main things that mainly set gumbos apart are the ingredients, which themselves lead to different cooking techniques. But ingredients themselves I think can be plugged in to a spreadsheet. Not sure if plugging in all of the different possible cooking techniques would be numerically feasible.

I'm thinking Gumbo Z'herbes might need it's own "oddball" tab ... kinda like pastalaya.
I only say that because the greens themselves are a thickener to an extent, so I'm thinking it would really throw off the metrics and resulting yields. (I've seen Z'herbes recipes with roux, file, both, and none).

You have stumbled upon the problem with a gumbo calculator (GC)
I would say the GC needs to be as basic as possible. Like the jamabaya calculator (JC), the GC needs to be made for people who do not know how to make gumbo. I use the JC all the time as a means of a shopping list depending on my group size, but know how to make jambalaya. Also, I don't follow the instructions verbatim although I did once to see how it would turn out.
Individual chefs can experiment with the GC as they wish, but at its core the GC should be clear directions for a basic gumbo.

Exactly what I was getting at.

It's all on you, Mr. Rat.
I think we can help with the brainstorming and logic, but i'm no where near as proficient with Excel and spreadsheets as you are.

Bump for afternoon/evening crew

I think this thread's been anchored where we can't bump it up ... likely because the title of the thread is "paging Stadium Rat" ... they frown on doing that.

Some good ideas in this thread. I am going to do some work on it during the Mardi Gras weekend.
