Need of an easy and good chicken soup recipe - I'm dying.

Got the flu. Ugh! Girlfriend wants to make chicken noodle soup for me. Anyone have a good recipe that she may use a rotisserie chicken to make it easier? We've both never made it before. Thanks.

Saute some diced onions and chopped celery in butter. Add chicken stock and bring it to a simmer, throw in some chopped carrots as well as some herbs like basil and oregano. Simmer for 20 or 30 minutes and add cooked pasta of choice (maybe egg noodles) and the rotisserie chicken. Bring up to heat.

I've done this before for a quick soup for my son. I left out the onions and celery (for his personal taste) and just threw in the pasta, carrots, herbs and chicken. Voila! And better than Campbell's.

And if you don't have stock you can use Better then Bouillion chicken base. I like carrots in mine. Also a handful of rice.

I think you would be better off cooking the chicken from raw to make the stock instead of roasted bird. It would seem by intuition that the essential elements that make it a good medicine for what ails you would be cooked out while roasting it. Make a stock, then debone the meat.

I think Better Than Bouillon may even make a low sodium chicken base. Look for that if you're going to use that for stock. Kitchen Basics liquid stock isn't too bad either. Far from homemade, but not bad.

Homemade isn't difficult. Simmer the whole chicken plus some wings and necks with an onion, a few celery stalk with tops and a few sprigs of parsley. Strain the stock. I don't saute the veggies. I add chopped onion and celery with chopped parsley at the end, I also add sliced carrots at the end but not too many as they make the soup a little sweet to me. Add the chicken meat and whatever cooked noodle you prefer. The noodles soak up the broth, so I cook those and add to the servings rather than let them sit in the soup too long.

For something quick when I'm feeling puny, I get a good egg drop or wonton soup. Whole Foods usually has some decent soups. Check there and if you can find a matzo ball soup, you're really in business.

I wanted some won ton soup last week and stopped at a place by home to just pickup some for dinner and a whole quart of regular won ton soup was $3.00. It was pretty good and by all means worth 3 bucks. Surprised the hell out of me.

Same with me. I wanted to ask the folks if they made a mistake the first time until I checked the price on the menu. My place does charge a dollar for an extra bag of the chips, though.

Wonton soup is cheap too. Both hit the spot when you're puny, but the best is matzo ball soup, hands down.

I try to keep chicken soup in the freezer for puny days. I can add a little pasta, rice or even matzo balls. I just made veggie soup for the freezer for puny days, though I like both soups for meals, too. But, when you're feeling puny, they're the best.

Mine had I'd say 8 big won tons and they gave me two bags of fried wontons and two fortune cookies. I'll hit it again this week.

Just hope I didn't eat their cat.

This thread motivated me to make some home made chicken stock. On the stove boiling now. Going to make chicken salad with half the chicken and soup with the rest and some of the stock. I put some rosemary, lemon thyme, and oregano from the herb box in there. Tossed in an onion, bell pepper, celery, lots of garlic, carrots, and a bell pepper. Smells awesome!

Well, I posted 3 different options. One with bought stock or base, one homemade, one bought already made at a store in addition to subs like egg drop and wonton soup. I ain't apologizin'! When you need a quickie soup, do it in whatever way you can! Especially if you're sick!

Instead of making it, go pick up a noodle bowl at Whole Foods, throw a little sriracha in there, and enjoy.
