or just cook a gumbo, remove chicken and sausage (or whatever meats) and then add that to the roll and have the rest of the gumbo to dip in

This reminds me of Guy Fieri sushi (no offense).
Or, too much rice. The rice should be 1/8-1/4" thick around the other ingredients. A good rule of thumb is to cover the nori with a layer of rice just thick enough to not see the nori.
This has to do with timing. The nori absorbs moisture from the rice & therefore the longer the rice is in contact with the nori, the more moisture it will absorb. Putting less rice and working faster should help mitigate chewy nori.
Good sushi benefits from great mise en place!

Pour gumbo over rice, eat in a bowl with spoon, keep bamboo in the cabinet.

Instead of Nori
Try using fresh greens or Chard
Boil it down a bit and let it dry out a little.. you will have to cut it to square it out.. but it will work and add more of a southern ingredient to your dish

Instead of using seaweed paper go get some rice paper from your local Asian mart
It melts in your mouth and will take care of the chewy seaweed. And you can still use it on the outside
You can try it at any sushi place. Just ask for rice paper instead of seaweed

Use Soy paper next time. Nori gets chewy and tastes funny after it sits for 10+ minutes.

Pretty sure to make sticky rice you give it a good rinsing before cooking.

You don't need me to tell you that's the worst looking sushi I've ever seen, but.
Good idea. Maybe next time. I would also, personally, try and think outside of the standard gumbo ingredients for sushi. Lol. I like the Kuna-Sushi idea, but why would I want gumbo in a sushi roll when I can just have gumbo? Just my thinking on it.

It is going to be more of a novelty than anything else. I want someone to look at it and say WTF and then eat it and say that it is delicious :)

I have tried two more times and I just can't get it to work. I am officially giving up on the idea :(.
