Memorial Day Burgers, Hand Cut Fries and Eggplant Sticks

Obviously Memorial Day is a day of remembrance for all those brave souls lost in battles for the freedoms we so very much take for granted every day. I don't get it when some say "Happy" Memorial Day. It's really a day not to be happy about but more of a solemn day to me. One of those freedoms men and women made the ultimate sacrifice for is to enjoy Memorial Day as the UN-official start of summer. The first day for many to light a grill and cook burgers and hot dogs. My meager contribution to that follows.

Smashed griddled burgers done on my grill steel on the Keg, hand cut fries and homemade eggplant sticks.



Hot fries just out of the oil.



Eggplant sticks



I was a bit hungry so I made two burgers for myself.



One dressed and one a simple cheese burger.

Dang, I love fried eggplant sticks. Crisp on the outside, creamy inside...why don't more restaurants offer these?

hey the rest looks good, and id still eat the bun, but that is a lot of effort to go half arse on the bun!

I smoked a lemon rosemary spatchcocked chicken on my big green egg, along with some squash and eggplant. Also made a pot of black eyed peas. Good stuff. Sorry, no pics.

Dug your burger patties, fresh fries, and eggplant. I need to break down and buy a fryer like yours.

More flavors are released from the cheese when you place it on the patty as its finishing and melt the cheese......just saying.....

fries and eggplant look amazing though

Do you ever double fry your French fries? Fry them at about 325 for 4 minutes. Pull them out and put in the freezer for at least 30 min. Then fry again at 375 for about 2 minutes. Makes all the difference in the world in being crispy. You can even do a couple of batches and freeze them and fry the second time later.

I ordered some at a restaurant several weeks ago. They were awful. They weren't cooked enough. It was a shame to have messed them up. Everything else about them would have been good.

Tell me more about the egg plant sticks. Are they battered? Do you peel the egg plant?

Real nice Clark.

I too lament more places don't do eggplant sticks and when they do it is usually too big and under cooked.

Next time, to be on the safe side you might want to take some of the wheat from you backyard down to the mill before making your home cooked buns. At least head over to Heinz Village and draw fresh red water for the potato sticks.

Your buns look fine. I mean, they have grill marks and everything.

CN, just thicken your skin a little on this board. I think it's too close to the OT and Tiger Rant to be immune.

it's not personal attacks, just food opinions. after all.
