3/4 cup dried chickpeas
1 large onion, diced
2 garlic cloves, diced
4 T parsley
1 t cumin seeds, crushed
1 t coriander seeds,crushed
1/2 t baking powder
Salt and fresh pepper
Oil for frying
Pita bread and a yogurt cucumber sauce
Cover the chickpeas with water and soak overnight.
Drain the cp's and cover with water in a boiler. Bring to a boil, cut to a simmer and go for an hour. Drain.
Put cp's in a food processor with the onion, garlic, parsley.cumin, coriander,and baking powder. Salt and pepper to taste. Process to a paste.
Shape to walnut sized balls, flatten slightly, and fry in 2 inches of oil until golden. Serve with the pita and yogurt sauce.
