I took some pictures
It was better than what you could get in most restaurants IMO. I had some guidance from my Vietnamese buddy.

Looks great. Did you wash the meat in between boilings? Also, how much ginger and Star Anis did you use?

Worth the effort? Id say it is surprisingly easy...just takes a long time. We had 2 oxtails in each bowl. A lot of meat to dip in the hoisin. We used the koon chun brand. Realy good!

It is a Vietnamese soup. Typically a very clear broth - when made with beef, you have to boil the meat several times on very low rolling boil and then wash it with water in between.
Very subtle flavors, but you add fresh herbs and a touch of fish sauce -- absolutely great for breakfast, lunch, or dinner.

Seriously though my vietnmese coworker is a great cook and helped me out. You overestimte the complexity of the dish. Its very easy. And you aren't going to get all the good meat at a restaurant

That's just the strap for my camera bag.
Took that picture at a place called The Pink Door in Seattle.
I didn't eat anything there but they had some really good cocktails.
Check it out some time if you ever make it up there. It's downtown.
