Needed a quick and Whole30/Paleo approved meal for the GF and myself. Scoured the internets and found a pumpkin soup and sausage recipe. I made some changes to it and in the end we ate a delicious and filling soup for dinner.
Ingredients:
- 5 pieces of bacon
- 1/3 container Guidry's creole seasonings
- 1 lb of your favorite smoked sausage
- 3 cans of pumpkin (not pie filling)
- 4 - 5 cups of chicken stock (to get soup consistency)
- salt, pepper, garlic powder to taste
- fresh parsley to garnish
Recipe:
Fried bacon until crisp and removed from pot. Retained grease.
Added Guidry's and sausage (cut into small pieces) and fried down for about 8-10 minutes until fat from sausage had rendered and veggies were soft.
Added pumpkin and then started adding chicken broth until it reached a soup consistency but wasn't too thin. Probably one and half large containers of broth.
Added salt, pepper, and garlic powder. Tasted and adjusted seasonings if needed. Let simmer lightly for about 20 minutes for flavors to come together.
Served in a bowl and garnished with chopped bacon, fresh parsley, and Tobasco sauce.
Makes for a hearty and delicious quick weeknight meal.

GF was very happy and I was pleasantly surprised at how good it came out. Will be even better the next day.
