Lunch for 45 people--what goes with jambalaya?

Cooking for a dr clinic next week for 45 people. Was planning on serving jambalaya because I figure that would be easiest for me, as I am just cooking out of my home kitchen.
What else should I serve with it besides French bread?
Was thinking about Cole slaw but wasn't sure if that were enough.
Will also be serving dessert (chocolate cake or strawberry cake--haven't decided yet) and iced tea.
Charging $8 a head. I provide all utensils, ice, cups, plates, etc.

Potato salad or white beans. Those are the only options.

Depends on the kind of dr's office. Is this a rural general practice, staffed by "regular" people? Or is it a high end dermatologist or OB/GYN that's entirely staffed by women? If there are a healthy portion of women in the crowd, consider a "better" salad (ie, something more than an iceberg mix w/carrot shreds), coleslaw, and/or a simple veg dish (macque choux, maybe...or smothered green beans cooked w/new potatoes).
White beans aren't the friendliest workplace food, LOL. Esp if ppl are working in close quarters or in small rooms w/patients!
It's easy enough to make a nicer salad: add nuts (or offer on the side), chopped apples, goat cheese or blue cheese crumbles (on the side if it's an allergy prone or dairy avoiding group), and make a scratch vinaigrette w/apple cider vinegar & evoo, plus a little creole mustard.

Green salad and French bread. That's all you need, along with your dessert.

Is this a money making deal? That's pretty cheap considering what it includes.
I'm with HO on this. I'd stay away from the white beans in an office setting for a variety of reason, an additional one being it's an awfully heavy meal. I'd go with a nice green salad of lettuce, a fruit like strawberries or blueberries and a roasted or sugared nut like pecans or walnuts with a sprinkle of feta or goat cheese and a vinaigrette. Look up Sassy's dressing in the recipe book. I use that and it describes some suggested salads like I described above. I use it a lot with spicy heavy dishes. It's a nice balance.

You ever fried fish for 45 in a home kitchen and transported it off site? Damn...answer my first question (you actually have) or give the lady workable answers.
