My Dad used to make the best from scratch, but took the recipe to his grave 20 years ago.

My favorite for cut (not drop) biscuits) that come out flaky:
1/2 cup (1 stick) butter
2 cups self-rising flour
3/4 cup buttermilk
Cut butter into flour until it looks like coarse meal.
Add buttermilk, stirring until moistened.
Knead dough 3 or 5 times on a lightly floured surface (don't knead too much or else they get hard).
Roll dough to 3/4 inch thickness.
Cut with a biscuit cutter & place on a lightly greased baking sheet.
If you use a 2-inch biscuit cutter, bake at 425 degrees for 13-15 minutes; for larger or smaller biscuits, adjust the time.

There is a recipe for "Popeyes biscuits". Although I don't think that they are like Popeyes. The biscuits are damn good though.
Calls for sour cream and Sprite or Seven up being used in the dough.

You know, if you have the time and energy to make biscuits from scratch that's fine. But ever since I discovered
my rolling pin hasn't seen the light of day.
