Let's Make Grilled Baby Octopus

I picked up some baby octopus from an Asian mart. Aren't they cute? I decided to go with Asian flavors, so I marinaded them in soy sauce, sesame oil, black pepper, Korean red pepper and grated ginger. Everything was vacuum sealed and is now cooking sous vide at 180 degrees for four hours. These will be finished on the grill then perhaps a squeeze of lime and maybe some eel sauce.

The package said that they were pre cleaned, but feel free to wash them again. I did thaw them in water so they got another rinse out of it. With larger octopus, you lop off the heads just above the ball and eyes and remove the webbing from between the tentacles. I left the baby octopus whole. I was actually hoping for smaller baby octopus, but the Asian mart had slightly larger ones, about three inches across.

Normally I go with more traditional flavors, using fresh thyme, rosemary, coriander seeds, salt and pepper, finishing with some olive oil, lime and parsley. Again, I wanted to go with Asian flavors with this batch.

I've only had luck with octopus using an old polish long smoke and soak method. It's very involved and really not worth the effort even though its probably the best tasting food I've ever had.

I did some recently. Not sous vide but I kept them in a pot for about 3 hours at 185-190 and finished them up in a cast iron. Didn't feel like lighting the pit

I havent done the octopus in plastic but I don't see any harm in cooking in plastic bags. You've probably eaten a lot of food out of plastic bags

True. I think it all depends what the plastic is made from. Low quality plastics used for cooking I don't think are safe. What the hell we are gonna die some day though right. frick it didn't mean to derail the thread. Carry on

with sous vide, you are not getting the plastic at a high enough temperature to affect it or at least if you are using food grade bags

I use hoisin sauce, red pepper flakes, garlic, and a little soy to thin the marinade before putting on the grill.
