Left Overs: Suggestions for Steak

I have about 2 lbs of sirloin steak left over from Sunday... Need suggestions to make a meal out of it for dinner tonight for the family.

Fajitas is not an option as we basically did that last night with a left over pork loin.

The only way I really enjoy leftover steak is cubed up small and thrown in with an omelet or scrambled eggs just long enough to reheat it through. Add some onion bell pepper and shrooms. Top with some salsa. Damn it's good.

I like to warm it just a little then slice it very thin and eat it on a salad

Steak fried rice. I usually marinate raw pork or beef in Chinese five spice, orange juice, soy sauce and red pepper flakes, but since your steak is cooked, I would still use the other ingredients (except for the orange juice) to season the rice. Diced or julienned carrots, green peas and or snow peas, onions, peppers (and any other veg you like). Don't forget to finish with sesame oil.

Saute some onions, bell peppers, and garlic. Slice steak thin and add to the pot with some beef broth. Season it up a little and let it simmer until the steak heats up. Make poboys out of the meat and reserve the broth mixture for dipping.

Leftover steak is perfect for an arugula salad.

Sear a sliced red or yellow pepper, sear/reheat your steak (cut into slices), and serve over a bed of arugula.

Dress with olive oil and fresh garlic, shavings of Parmesan cheese.

Trim the fat off and chop it up. Put in a big bowl. Cover, and I mean cover, with the cheese of your choice. Nuke it till the cheese melts. The cheese will keep it from getting that dried out nuked steak taste. Then get you some white bread mayoed and creole mustarded up. Pile the meat on. Add some purple onion slices, fresh maters, lettuce and go to town.

Slice the steak into bite size pieces and stuff baked potatoes with them and and butter and sour cream. Pour the pan drippings over the potatoes.

I usually recut the steak, cut up some onions and cut fry the potato into hand made fries and mix it all together at the end.
