Left over boiled crawfish help

I have some leftover boiled crawfish and I would like to put them in something to go on top of grilled ribeyes. Besides the traditional etoufee, any other ideas?

Crawfish enchiladas
Stuffed bellpeppers

Butter and flour roux
add chopped onions
slowly add whipping cream
add crawfish tails, green onions and parsley
Season to taste
I don't have measurements in front of me but I usually just wing it anyway.

Look up Emeril's recipe for Crawfish Imperial. Food network site I think. It's real damn good.

Make an old school crawfish Mac and cheese but serve it on the side....no yellow coloring though, you'll get cancer
