I consider myself a well above average cook. My biggest down fall is my lack of knowledge of spices beyond the basic dozen or so.

Any help of learning them?

Taste them.

I learned the flavors of different kinds of dried chile peppers by grinding them and sprinkling them on baked potatoes. Just butter, salt, black pepper, and one kind of dried pepper per potato. Helped me get a better feel for the difference between guajillo and pasilla and the ratio of each to use in my pozole. And it's helped me up my spice rub game.

Cook rice and use that spice if you want an example of the taste.

Or bread.

I've also seen cream cheese recommended as a vehicle for sampling various herbs and spices.
