Large Roux Paddle

Making a big gumbo this weekend using a large cast iron jambalaya pot. I see a lot of folks use those stainless steel paddles in these types of pots, but due to scrapping a good bit making the roux, I am hesitant to do this. Would a round nosed wooden crawfish paddle or something similar be better?

I imagine that would work, provided you grind down the paddle to fit the contours of the pot.

Or go to a restaurant supply store and buy a big wire whisk.

A small, pirogue paddle is the traditional way to go.

How much roux you need? I'd consider making it in batches on the stovetop, storing it, and then doing the gumbo in the larger vessel.

And, as for the paddle, I sanded the varnish off a boat paddle...works great for stirring a large gumbo.

what you want is a large mayonnaise whip from a kitchen supply place. It will be about 3 1/2 ft long.
