Damn! At today's prices, I can easily eat $25-30 worth of crawfish.

Problem is that places/event like that get you by serving you 2 lbs at a time and making you wait long between servings.

I hear ya but I got time and that just gives me time to drink a few beers between servings. Not that different than what I normally do at a backyard crawfish boil.

Maybe I'm just trying to find the upside so I move forward. I appreciate all of the feedback so far...But I was looking more for people that either have experience with this particular event or plan on going.

If you're seasoning crawfish on the outside and have a grit or can even tell it's been seasoned on the outside...then it is simply a technique problem. Not a problem that some seasoning was applied on the outside.

Season water, undercook crawfish slightly, throw them in an ice chest while sprinkling seasoning, grab the 2 handles of the chest and toss, toss again 10 minutes later once it's all melted and enjoy....right?

Am I missing something???

shite I was born and raised on a crawfish farm SLAP IN THE MIDDLE OF CRAWFISH COUNTRY LA and this wasn't an odd technique for a lot of us locals down there.

Only people ive personally come across that season crawfish on the outside were old people in my ex's family from lafayette and the crawfish were awful.

Season water, boil crawfish, cut heat, soak up all the yummy seasonings in the water. Done.

Well fack me!

I swear, I never knew this board had a disdain for that technique of seasoning.... Guess I never payed much attention to the "how to cook crawfish" threads here because I figured my life long experiences of cooking and eating other's crawfish allowed me to do it properly.

Oh well...being the intent of the thread is likely gone now, I might as well be schooled.

Eta: not talking crap but just for the record....I'd stack my bugs up against anyone's crawfish. I mean, I've had better than mine but I damn sure know that they are better than 75% of the crawfish I've had through my years.

I'm working on a new liquid seasoning that you use on the crawfish after they've come out the water, I'll never get rich off of f&d board posters with that though

Stink, I like 'em just about any way I can get 'em, and I love to boil them, too. And, if I'm pushing batches through the pot a little fast to feed the crowd, I sure as hell will layer in some seasoning in the chest ( which melts completely), to finish.
