What are the best/your favorites?

I'd like to get a set of good knives that will last a long time if taken care of properly,

I bought a cheap paring knife the other day out of necessity and you can really tell a difference in the quality/edge of the metal.

I got me Henckles. But the wife hates it when I sharpen them. Got to go outside in the yard with the dogs to do it.

Exactly, my chef's knife is ok, but I have to really work at it to keep it sharp. Sharper = safer.

That is a nice set but you should be able to find it for closer to $200 if you shop around.

Wowza, I've got that, too.
But not sets.
I've got a Wusthof and a Heinkel. But I don't buy sets. I buy single knives. Not a big fan of sets.

I have a number of the classics and have been pleased with their performance, but I also have never handled other brands...

I like my cheap Forschner Victorinox.

I have a Henckels I never use..
The Forschner is lighter,stays sharper longer and is easier to sharpen


Here an interesting review by engineers.

I have at least one of all listed above. I have a nice set of Cutco steak knives and several other Cutco both old and new. I also have a bunch of white plastic handle Dexter Russels which most restaurants have and these are very good and reliable. Good balance.
