I got a 15 gallon pot with burner and stand. I know I need hooks to lift pot but what other items do I need. What paddle should I get? Also do I need the bayou spoon? What is recommended? Will order from amazon.
What else can I cook besides jambalaya?

Stay away from tomato gravys in those pots... The acid isn't good for the pot.
Now you can cook one, but clean your pot in a timely manner.
I generally only do regular gravys and roux based stuff... Oh and fry fish, chicken etc...

You could do a pitchfork fondue!

get you a cheap stainless crawfish paddle like so.
add a ballpeen hammer and 15 minutes time and you can get a nice little curve to match your pot perfect for turning your rice.
I also have a little strainer basket I use to take out my meats ( but leave the oil/juices) after browning before I add my trinity.

You can fry some fish or cook some cracklins. It will also help season the pot.

Get a stainless steel paddle, not wooden.
And you can also do kettle corn in it (don't try at the same time as jambalaya, though).
Also, try pochejp's cracklins recipe. (see jambalaya calculator for link)

Big ol pot of red or white beans. Cheapest way to feed a crowd.

Where did you get it? How much did you pay? Can you post a pic?

I got it locally from someone selling. I will post pictures later.
For cracklings what do I ask the butcher for since I am not in Louisiana? What oil do you use?

Is the most overrated dish in the Southern Louisiana lexicon. It is a bastardized version of paella. It is so played out.
