Anyone have any good hibachi recipes? My fiance' enjoys going to Ichiban here in Houma and we were trying to cook some of the food but heven't been able to get it right. Ours just comes out extremly salty, it doesn't have the semi sweet kinda flavor we get from there.
We used Soy and teriyaki as the chef told us but I am guessing they sweeten there teriyaki somehow.

Jaden Hair's homemade teriyaki sauce is pretty straightforward and good: LINK
You don't need to add soy if you're already using teriyaki sauce...the soy is in the sauce already. That's why you ended up w/too-salty results. I like to add a little minced garlic to the 'yaki sauce.

ok thanks I'll try it out. The reason I used both is because that's how they do it at the restaraunt.

I think they use oyster sauce too which offers a little sweetness.

Lots of butter.

Egg yolk sauce, and yum yum sauce.

Onions, zucchini, sprouts and mushrooms.

How are you cooking it exactly?

You gotta get some mirin, which is a sweetened rice wine and add to the soy in like equal parts.

ETA, see the linked recipe above with equal parts mirin, soy sauce and sugar. That should do the trick.

I have a big flat skillet that covers 2 burners on my stove.

Ill have to try this, I really like hibachi.

It sounds like the teriyaki is the key.

And lots of butter.
