Jambalya Help

Need a recipe to send to my wife's sister and brother in law in Buffalo, New York, They want to cook it for a youth group of about 60 people. TIA

Have they cooked jambalaya before and just need a recipe for that many people,

... or are they jambalaya novices?

Either way the Jambalaya Calculator is the answer, I'm just wondering if they're getting in over their heads cooking jambalaya for 60 people ... in Buffalo.

If they've never really cooked one and are going in newbie style on a 60 person Jambalaya....yikes!

Tell them to cook a smaller pot first and get it right and then move up. Learn from the mistakes of the first few.

Use the jambalaya calculator.

My wife knocked out a 10 gallon jambalaya on her forst try using on the calculator and the occassional prod from me when she wasnt guarding her pot from the lid lifters.

Make it clear to them that they must use a heavy pot like cast iron. No stockpots! You're gonna need a 9 or 10 gallon one.

Yeah I suggested they do a Pastalya instead. That amount of rice can be very unforgiving. And yes they are novices.

I've found that when a novice thinks Jambalaya is a "simple" dish, they're usually think it's a sauce, that you then mix together with pre-cooked rice. Many people don't understand that the rice is cooked with the other ingredients. That's why they often think "how complicated can it be?"

No way in hell they go in as a newbie and pull off a Jamb that big. Hell, a lot of experienced people on this board couldn't pull it off.

To be honest, while the pasta is more forgiving, you sure they can pull off a pastalaya? After moving to Atlanta and also seeing so many of the fraudulent videos out there on YouTube, i've realized that people from other places don't even comprehend that things like onion, bell pepper, and celery (if you use all three) are seasonings. They view them as vegetables, and a "fine dice" to them is one inch square chunks, which they leave undercooked.

At the end of the day, there's no recipe out there that anyone should try for the first time for 60 people .. .much less a Jamb or Pastalaya.
