That looks horrible. You should definitely send it to my house so I can see that it is properly disposed of!!

I love smoked pork shoulder in jambalaya. I'll be trying bacon next. I can't imagine it not being great. To be honest, I have yet to find something that bacon doesn't improve (within reason).

I put bacon in my a lot of my jambos, and I'm from gonzales It's not traditional but I love bacon and pretty much put it in everything I eat

I cook bacon or sausage first every time i cook a jambalaya. Then pretty much do what you did minus tomatoes. Tomatoes don't belong in a jambalaya but to each his own. Kinda like using cream of celery and mushroom soup in one.

I have an etouffee recipe from an old room mate from Texas that uses cream of mushroom as the thickening agent instead of making a roux or using an instant roux. Not the worst bastardised south Louisiana dish I've ever had.

I had a friend who did this also and I thought it was pretty damn good. If it taste good, it taste good. Whether or not it the "right" way to do it or not, I could careless as long as it made my belly happy.

I cook the bacon first and let the fat help cook the pork and sausage. If there's a ton of grease, I usually skim a little of the top after I add my broth
