Jambalaya for 850

I stumbled upon this on another board and I thought y'all might find this interesting. It's an Aggie that has a 110 gallon pot and makes jambalaya before football games.
CORRECTION: He's not an Aggie - he's a BR firefighter that has Aggie friends.
His recipe:
240 lbs meat - 80 pork, 80 chicken 80 smoked sausage
120 lbs chopped onions
36 lg bell peppers
2 gals of minced garlic
5 lg Tony's Cajun Seasoning
125 lbs of rice
His custom-made pot:
His homemade burner:

You can buy onions, bell pepper and celery already chopped from a restaurant depot or some other type restaurant supply place.......even your local produce market can get them for you, normally in 5 or 10 pound bags if you order in advance. I do so every year for our Gumbo Cookoff.

He left the Kitchen Bouquet off of his ingredient list.
