It seems that I have difficulty getting the temperature right, so my jam is either burnt on the bottom or too dense or has some other problem.

If not the crockpot, other ideas?

I wouldn't try it. My mom use to make a quick jambalaya in the rice cooker but it wasn't very good.

What pot are you using to make your jamabalaya? I use either an enamel or regular cast iron or a Magnalite. I have better success with the Magnalite TBH but I've made some good ones in the cast iron.

ETA: If your rice is to "dense" get a big serving fork and fluff it up, that helps.

Just one of those "normal" pots. The kind with the black non-stick inside.

Probably good advice. The ones I found via google all show adding the rice (cooked I suppose) to the crockpot at the end of the cook, which defeats the purpose.

Your pot isn't holding the heat good enough. If your pot is oven safe make it like you normally do, when you add your rice and it comes to a boil, put it a preheated 350 degree oven for 40-45 minutes to cook the rice. Other than that the only solution is to buy a new pot. I suggest either Magnalite or an enamel coated cast iron.

A crockpot is the worst way to make jambalaya.

Are you using the calculator?

No. I thought it was to make large batches, so I never thought about it.

There are 2 small batch tabs.

Be sure to get the latest version, 7.2.

Start on the stove, bring to a simmer, then go in to a 350 degree oven for 25 + minutes. Trust me....or trust Paul Prudhomme.

My mom did the same thing for years
Rice, Butter, Tony's, and Sausage in a rice cooker
It really wasn't bad at all...just not jambalaya
Now when I make fun of her for it I can say she wasn't the only one

Get a new pot. You'll get better browning in one that isn't non stick.
Use the calculator.
Take the suggestions on finishing it in the oven. You can still do all the browning and prep stove top. It's sort of like the oven roux. Hard to burn the bottom in the oven.

I like a rice cooker jambalaya. It ain't a real jambalaya, but it's an easy meal to make on a Wednesday night when my wife works late and I need to mow the lawn. Just toss some rice, raw sausage, canned beans, garlic, onions, butter and stock in a rice cooker and let it run for an hour. Plus, it makes a shite ton, so I have lunch for a couple of days.

Its possible but you probably will not like the end product. I like the others on here have tried the rice cooker method. It works in a pinch and you can even get a little gratin on the bottom sometimes. I have had better results when I brown my meat in a separate pan then add to the rice cooker with the other ingredients.

Thanks to all.

I pulled down the Jambalaya Calculator and will try a different pot, and maybe the oven method.

I appreciate all the input.
