My wife got a Paleo diet recipe book for her birthday. I came across a shrimp taco recipe and decided to accompany it with a pico recipe that was in the "veggies and salads" section.
2 oranges, peeled and cut into segments
1 1/2 cups diced jicama
2 1/2 cups diced cucumbers
1/2 cup red onion, minced
lime juice to taste
sea salt to taste
black pepper to taste
hot sauce to taste, they recommended Tapatio but I used Sriracha
I'm usually pretty skeptical when it comes to diet books but this turned out pretty good. I was definitely surprised.
Any of y'all tried this diet? No cheese or starches is a pretty big turnoff for me.

No tomato? I mean, I guess the oranges substitute for it, but seems odd. I'd try it.

It definitely could have used cilantro. I'll have to add that next time I make it.
I thought the same thing about the tomato but the oranges were a good sub.
Let me know if you try it out and think of anything else that might be missing from it. I'm thinking a little garlic or garlic powder would also be a good addition.

No cilantro = no pico.

Well shite, I was hungover when preparing this. Here's a pic from the recipe book:
ETA: Pic looks like it has cilantro in it but not listed in the recipe. Again, I was hungover, so you have to excuse the sloppiness on my part. I did remove all of the orange seeds though.
