If you had three days to spend in NYC, where would you eat?

Doing research for in-laws heading to NYC in Feb. Im thinking a very spontaneous trip would be best, but what are a few food and event ideas of all price ranges and formalities that a day can possibly be planned around? Decent pizza joints? Mid-upper tier steak place or is top of the line worth it (Im assuming Peter Luger's is worth the money)? Hidden dives?

I'll second Katz's and add...
Grab a burger at the Parker Meridien Hotel Burger Joint (complete hole in the wall, do not go at lunch time, line is at least an hour long).
I prefer Sparks Steakhouse to Luger's, but I understand those who feel the other way.
El Parador for Mexican.
Sam's Place in Murray Hill for Italian.
Pizza at Artichoke's.
Go to Crif Dogs for a hot dog. While there, step in to the phone booth and ask to enter PDT, a hidden speakeasy on the other side of the wall. Another fun drink place is Angel's Share.
Speaking of drinks, go to Hudson Malone in Midtown East, if Doug is there, best bartender in the world.
Grab brunch (or dinner) at Freeman's. Really cool place unlike anywhere else in the city b/c of its location at the end of a long alley way. Food is great too!
Event-wise, go to at least one museum, pick any, but go to at least one. Or see a B'way show. There's nothing touristy about doing those things. And take the Staten Island Ferry, it's free, so you get to see the Statue of Liberty and Ellis Island. Once you get to SI, just stay on and head back to the Manhattan. Take a walk on the High Line.

I thought I had heard several years ago that Tavern on the Green was closing down.

It did. But it has reopened.
It was a really nice place to sit outside on a Sunday afternoon in June with some cocktails. Not sure the same could be said for a day in February.
