Ideas for stretching 1lb of pulled pork for a meal

For my family of 10 people?

I had thought about making quesadillas with it

then I thought about jambalaya.

Either of those sound any good?

Y'all have any other ideas?

ha. nahh, it's leftover from a get together we had....

it was cooked for about 14 hours, the first 10 it was slow smoked over pecan chips.....


everyone wants the rest. i was trying to think of a way to incorporate it into a meal so we can all enjoy it

Yeah, I'm thinking I will just do that and be done lol
we had several leftover chicken leg quarters as well so that's why I was thinking jambalaya. But those are gone now :sigh:

Mini tacos

Go to a latin grocery store and get the mini corn tortillas

Each person gets 1 or 2 mini tacos with some pulled pork, onion, cilantro and lime.

Small spring rolls or Lettuce wraps. I prefer to leave the sauce as a dipping option for both and only add small amounts of other weakly flavored ingredients like watercrest or plain rice (add a little food coloring to make it look special) if the meat is especially good.

I agree with the cilantro mentioned earlier though. It goes great with pork as do mustard based sweet but spicy sauces.
