Ideal Market - Cracklins?

Friend of mine swears by IDEAL Market's cracklins. Anyone had them? Are they that good?

I have had homemade cracklin, bergerons, ronnies, billy's, best stop, etc.

There's little variation. The process to make them is always the same as is the ingredient.

Cracklins have no shelf life. Sure, you'll eat them after a day, but if they're not fresh they're largely unremarkable.

ETA: Almost zero percent chance these are Cajun cracklins.

Haven't had them, but knowing that IDEAL is a Mexican market, they're likely "chicharonnes," ... which are technically the same thing (but usually bigger pieces and not seasoned). They're the only substitute i can find out here in Atlanta, although i have to take them home and season them my self. My Wife loves cracklins, so i get them and make it work.

That being said, IDEAL is in Louisiana, so they're likely seasoned appropriately for their customers, and likely tasty. As such, it's quite plausible that a Mexican market in Louisiana has great "cracklins."

They are 100% this and aren't good.

I can see that. The Mexi-Mart in my neighborhood where i get mine isn't consistent with theirs. I only get them when it's a good batch. You can see when someone screwed them up and let a few burn on the bottom ... that actually messes up all of them, because the entire vat of grease now has a burnt flavor permeating through it.

It also helps that the guys let me come around the counter and pick them out myself with the tongs, instead of just getting a random grab. That way i get the "select" ones. Still have to take them home, break them up into smaller pieces, and season them though.

Your friend needs to try Danny&Bonnie in Gretna.


The big one on airline has 2 types, large chiccarones type chunks which
aren't seasoned well and still very soft inside. And smaller pieces of cracklin, which seem to be from the back, not the belly, but tastes pretty good sometimes.

They used to have it the heated glass container near the hot food line where they'd scoop it and put in bag for you, but now they have pre-packaged in plastic wrap next to the butcher section, and it's only worth getting if you the packed on date is that day or the day before, as it doesn't have a long shelf life. I buy it and take home and put in a ziploc and it preserves life.

I've had times where it tasted bad like used old oil. They sell it for $6.99/lb, which is cheap for cracklin, but this isn't as good as the normal cajun cracklin you'd get at Danny&Bonnie's or Chris' or the places out west.

i havent had these there, but ideal does pretty well as quality on everything i have tried.
