Anyone else see the Facebook Live video where they made this?

I really like Chef Steps. I think it's about $25 year to join.

I think I'm going to try this. Salted Carmel Ice Cream

If you cook your caramel to 385 degrees this won't turn out well.

That does seem awfully high. They did this live last week in their FB page. I'll watch it again and see if they corrected it.

Sous vide ice cream?

This is getting out of hand.

Sous vide, dry ice, and a blow torch to make custard. Wow.

The only thing missing is a Big Green Egg.

Chef Steps is great. I believe the $25 is a one time fee and you get access to all of their different recipes.

I am pretty sure I have watched every single video they have posted on their site. Also ordered a Joule for my bday, which should be shipping in October.

I joined chefsteps either early this year or late last year. Yes, just $25 forever and you get access to their premium recipes. Their videos are pretty good. I think I watched the ice cream video sometime in the last few months and have been wanting to do it. In the town where I live, there's a super popular little ice cream shop called A la Minute, that makes ice cream to order using kitchenaids and liquid nitrogen. It's superb. Finding out that I could do that at home with dry ice was intriguing.

There is actually an ice cream maker attachment that works quite well. We use ours every once in a while.
