I've never used a propane fryer for frying fish. I tried it tonight. Heated the oil up too fast, got it to about 475 degrees, had to let it cool down and put too much fish in. I did absolutely everything wrong that I could have done wrong. I'm so pissed. I'm eating cookie crisp cereal for dinner

I always use the first piece of fish or a lone French fry to gauge the temp of the oil if a thermometer is not available.

It really is. That's why I'm pissed. And I had a thermometer in it. Just working on fish and it got too hot. Burner too high I guess

You're lucky you didn't catch your outdoor kitchen or entire house on fire. Let alone 3rd degree burns and death.

When I was a kid, a neighbor would toss a kitchen match in the grease. When it lit, the grease was ready.

I googled this method and found a couple reports of catastrophe. One fellow said, "just make sure you don't drop the match in a pot of oil that's too hot. if it's hot eough that it's starting to smoke (way too hot to cook with) then it's reached its vapor point and things will go south with a quickness."

Another said: "I used this technique for many moons until one day, the grease ignited.

Darned near burned the kitchen(and house) down. No Mas!"

Do you have an oil thermometer or were you just not paying attention?

If your fryer looks like this you are doing it wrong

1. Don't stress about it. It happens to the best of us. We all ruin meals at some point
2. If anyone says otherwise they are lying or aren't a good cook anyways, cause they're scared to venture out and try new things.
3. Cookie Crisp kicks arse!
4. It could be worse. The first prime rib I cooked was about medium well when it was done. Ruined it! Now I'm a prime rib master. Do at least one a month and always perfect

I'd say that's your problem.

Sorry for your loss.

I was inside working on the fish. I just wasn't watching it. The burner was out in the yard so if it caught on fire it wouldn't have caused any major problem. I was unfamiliar with the setup and I fricked it up.

should have used a watch to remind you when to check the temp of the oil. i think you have a few of those, right?

Pro tip: if you don't have a thermometer available, throw a match in the oil. When it ignites, you're at 350.

ETA: looks like someone beat me to it
