I need a new seasoning
I have been using a big jar my buddy made but that is now exhausted. I of course have Tony's but what else could I look at as sort of a season all?

Look at a copy of Prudhommes original cookbook, it has a recipe for the clackened seasoning in it.

Looking for something with a little more kick. My mother is Cajun so I have high expectations. I could try making my own but wouldn't know what I needed.

Use this all the time. Mostly chicken breasts and tilapia filets that I throw on the cast iron

I live and die by Tony's, but here's my dark secret.

Over the weekend my wife rubbed down the pork chops top and bottom with Lawrey's seasoned salt before I threw them on the grill.

...and I loved it.

I find most of the premixed to be too salty without sufficient heat. The Emeril's Essence recipe (all over the internet) is decent, except I reduce the salt and add more heat. Sub smoked paprika for the regular paprika, too.

Been hooked on Tiger Dust recently. Think they rename and relabel for colleges all across the South.

look for Leblanc's. You may have to go to Gonzales to get it, but it is absolutely worth it. They also have a no salt variety. It is a superior mix to Tony's with a better balance, less salt, more garlic. I find that if I season stuff with Leblanc's, I never have to add anything else.
