I know beets are healthy, but....

...am I unusual in thinking they taste awful?
I drank a coffee cup full of Knudsen's All Natural Beet Juice last night at about 6:30 PM. Had a terrible case of the runs about 8:00 PM and still sick at my stomach this morning.

Do I have a beet allergy? I hear people swear by the goodness of beets, and the goodness of garlic, but these things are the enemy unless proven otherwise.

Roasted fresh beets are delicious. Try the golden ones instead of the red. They aren't as messy to peel. Dice them then toss with salt, pepper, olive oil and a lot of Thyme and roast at about 450 degrees until done.

Cold, pickled beets are great, just hope I don't dribble any of the juice onto my tie.

Beets are reported to prevent the widest range of cancers but that's not why I eat em. They're delicious.
Wash em really well and trim the stems off, leaving about an inch of the stem. Wrap em individually in foil and bake at 400 degrees til they're fork tender. Let cool and peel the outside skins with a fork and knife.. or bare hands and paper towel.
Dice and serve with lettuce or arugula, add blue cheese or mayo.. Whatever floats your boat.

Thanks for the cooking tips. I'll try that recipe.

But...this Knudsen's Natural Beet Juice is TERRIBLE! I regret spending $6.99 for an undrinkable concoction, and an additional $5.99 for the pink anti-diarrheal remedy.

Beet juice is good for constipation because it increases gut motility. Maybe your body was just not prepared for it.

My outlook may be immature, but I feel like there are too many delicious food options to force myself to try to enjoy things I don't like. Looking at you, mushrooms.

When I buy a jar of beets I open it up and pour out about 6 tbs of juice. I replace it with an equal amount of balsamic vinegar. When you eat the beets all you taste is the vinegar. It's great.

They also increase your risk of kidney stones unfortunately.

I love roasted beets. I put a little cayenne pepper on them also.

The only thing wrong with them is that the next day my shite is maroon colored.

We have beets at or house maybe 2-3 times a month. Love them roasted from fresh but we also eat canned. Just a different taste, but also a lot cheaper.

Anyone notice the unusual color of your BM after eating fresh roasted beets? Maybe is the amount I eat when we have them.

Ha! My granddaughter(4 1/2)was at the house for dinner last night and we had to open a can of beets per her request for her to eat with the rest of the dinner.
