1st timer to brisket,,
Got half a brisket to put on the smoker for Saturday. Working with an electric shelf type smoker with digital thermometer.
Looking forward to some good beer and good brisket meat to go along with Lsu baseball and horse racing this Saturday.

A search may help. There were several brisket threads around Memorial Day.

I use a Pit Barrel. Smoked a 14 pounder over the weekend. Took about 9 hours and my barrel was running around 250. I just coat the brisket with oil then rub, get it to 165, wrap with foil and add some soy and L&P, the back on the smoker til 205.

Salt and pepper
Smoker at 225-250ish
Place brisket on smoker fat side up and go to internal temp of 195-205
Wrap brisket in butcher paper and place in a cooler with towels until ready to slice.

225
8-10 hours fat side up.
Big pan covered with tin foil.
Dry rubbed with spices of your choice.
Can't go wrong.

This. I used Franklin's Youtube video for a Pork Butt and it turned out great. Very easy to follow.

Does using salt & pepper only give a nice bark?

Not a bad price. I paid $2.89 at Costco last weekend.

But Costco was prime.. Albertsons is prob choice or select.

It could. Franklin videos also show how to make a really simple rub. Great one stop shop for your first go round.

Albertsons is choice.
I don't have a Costco membership. Edit: prolly time to get one. I need more aluminum pans, lids, foil.

His rub is literally salt and pepper

Some guy posted a week or so ago that Franklin doesn't give all of the actual rub ingredients...

Question for you; you say you picked up a half-brisket. Did you literally get half of a packer-cut brisket that's untrimmed or is it just the flat that's been super-trimmed? I've never had much luck with the super-trimmed flats, and the method of cooking would probably depend on this.
