I'm confused. Are you going to boil them with the crawfish and do them a second way as well? That's a lot potatoes for one Neal, but google Pioneer Woman's crash hot potatoes. People love them. The Cajuns cook them with the crawfish, though, or maybe smother them.

My grandmother would boil baby red potatoes for about 15 minutes, or just about fork tender. Remove them from the water and slice them in halves or quarters depending on the size. Then put about a tablespoon of butter in a saute pan and brown the potatoes til golden.. then add salt and pepper.

You can mix red and yukon gold potatoes.. add diced onion or shallots, chives.. whatever floats your boat.. You can also dollop sour cream or creme fraiche on the side.. But I like em plain.

Camp Potatoes:

Boil in crawfish water (If no crawfish, use crawfish boil), quarter and fry. A hit every time.

We boil them in water with crab boil. Cool em, slice them, pan fry them in bacon grease 'hash brown" style" with onions and garlic.

They're quite good. You can season them in any way you like whether with dry or fresh herbs or various cheeses. The method is the main thing.
