How to cook some mangrove snapper or lemon fish?

Caught some mangrove snapper and lemon fish yesterday now trying to figure out the best way to cook them (have snapper filets and lemon fish steaks both with scales still on)

Have always been a fan of simpler the better (butter, salt and pepper, lemon) but just seeing any if y'all have any cool recepies to try out

To change it up with lemonfish I like to make a blackened fish poboy. Blacken the lemonfish in a cast iron skillet. Butter some french bread and crisp in the oven. Pop your blackened fish on the loaf and top with some cocktail sauce.

Snapper


mix butter and olive oil on the stove
pout over snapper on the scales
add seasoning
place face down on grill for 30-45 seconds to seer the meat and lock in the juices
turn over and cook until it begins to flake
hit it with fresh lemon when done

That looks really good.

Was thinking about making some sort of sauce to put over it too
