Picked up a 3# crawfish stuffed pork loin from Billy's, how should I cook it?

Oven? Don't have a smoker

Sear and in oven. A regular pit will work too. Dont over cook it. Pull it at around 143-145 and let it chill. The pork will be perfect.

If you have a bbq pit put coals on one side. When you can put your hand over the coals for 4 seconds sear it over the coals for about 10 minutes, turning once. Wrap in foil with a some pineapple chucks and couple tablespoons of liquid.

Put on opposite side of pit as coals for about an hour.
