How many grew up with Gumbo Z'Herbes?

I never even heard of this until I was in my mid 20s. Did anyone grow up with this or is it more of a specialty item in high end restaurants?

Can the broth be compared to that of seafood or C&S gumbo or is it altogether different?

Any recipes that I can try? I don't trust the internet for Louisiana recipes.

There is no "broth". The greens are the broth. Google Dookie Chase's recipe for Gumbo Z'Herbes.

I did not grow up with it. Only heard of it in an occasional magazine article or on a TV show.

The only version I've ever eaten is my own, which I came up with after reading a bunch of recipes and combining elements. It's posted in the linked thread.

I've had gumbo z'herbes that most decidedly did have stock, or broth, if you will. Gris Gris has a recipe in the TD recipe collection you might want to look at. It calls for chicken stock, if that answers your question.

I'm certainly not saying the Leah Chase recipe is not legit! But there's more than one way to make this gumbo.

I grew up with it, only we called it gumbo verte (green gumbo)...we do two different versions. One is a meatless Lenten version that's more like stewed greens slightly thickened with a roux, and a richer, meaty version that included some salt pork, sausage, or tasso. Here's my meatless recipe: meatless gumbo z'herbes

Old-school cooks insist on including peppergrass, a foraged weed sometimes found for sale at farmer's markets or roadside stands. It has a lightly peppery bite & likes disturbed soils, field edges, and other odd bits of ground (as opposed to meadows/grassy fields).

So there is no roux in this type of gumbo, right?
