It's as good as the cook can make it. A good cook and technique will do just fine.

Before you skin it out take your knife and cut a chunk of meat out of the hind quarter......pan fry it and taste it. If it taste like shite throw it away and don't bother cleaning it.

My in-laws hooked me up with some damn good wild hog one Christmas. Trying to remember the details, but my wife's no-good uncle cooked him. Guy lives out on the Amite River and used to work in restaurants before he decided to devote his life to drugs.
