A friend of mine used to use the Oak Grove base years ago. It was serviceable, probably because of the ingredients he added. I've never used it. I've seen it on the shelves, though.

Found most NOLA restaurants going through the motions on Gumbo. I make 4 gallons a week. Its one thing to make 4 gallons a week and its anther thing to get someone who works for you to make 50 gallons a week the same way you make 4 gallons.

Oak Grove gumbo base is fine, the gumbo mix is shite. The base is just darkened flour and spices. Add some trinity, chicken, good smoked sausage, your usual seasonings and you have a serviceable gumbo with little effort or time.

Best I've had was at the little cafe/sandwich shop at Coushatta in Kinder. Dark, flavorful, and perfect. I couldn't believe it.

Chris' gumbo is good.

Not as good as my Mother In Law's, but good when I want some fast at night in the fall months.

Hub City Diner's gumbo is decent as well.

Cup of gumbo and half a special at chris' is a damn fine meal. Guillory's on Pinhook is also very good. Hard to believe- the gumbo on the buffet at the Amelia Belle in Morgan City is fantastic.

Possible I'm confusing it with something else, then. It was a very long time ago. By "serviceable", I mean I could eat enough of it to be nice, so that may not be the best word. Maybe it was another mix.

I have a friend who uses the Oak Grove jambalaya mix, but I've never had it. I've mailed it to her, though.

if you lived in pentagon or kirby smith in the 1980s the cafeteria cooked up a *MEAN* batch of seafood gumbo.

they put it out in the eating area in the silver pot/heating thing (like you find soup in restaurants)

i would skip the entire line for regular food, grab a bowl, spoon and bottle of tabasco, and would help myself to 4-5 bowls of that.



it was so freaking good. i'd have a huge pile of crab claws on the napkin by the end.

i would literally fantasize about eating it during class in the mornings

*sigh* the good old days.

Chris' gumbo is very good and so is Prejean's but if you want the best gumbo in all the restaurant world then head over to DARK ROUX way down Kaliste Salom Rd past Ambassador Caffery is hands down the BEST GUMBO in all of Louisiana!
